Nutter Butters:

Ingredients- For the cookie dough: 1 cup flour, 1 teaspoon baking powder, 2 teaspoons baking soda, 2 sticks butter, 1/2 cup peanut butter, 1/2 cup granulated sugar, 1/2 cup brown sugar, 1 egg, 1 teaspoon vanilla extract, 1 and 1/4 cups quick-cooking oats.     For the filling: 1 stick butter, 1/2 cup creamy peanut butter, 1 and 1/2 cups confectioners’ sugar.

Directions: – To make the cookies: combine the flour, baking powder and baking soda in a bowl then set aside. In a separate bowl, cream together the butter and peanut butter. Add sugars and beat until combined and well blended. Add egg and vanilla to butter and sugar mixture. Stir flour mixture into butter mixture. Add oats. Form small balls on a cookie sheet. Flatten the balls so they are about 1/4-1/2 inch tall. Bake at 350 for  10-12 minutes. Let cool for at least 10 minutes before putting on the filling.   To make the filling: Creme together the butter, peanut butter, and confectioners’ sugar until smooth.  Assemble the cookies by spreading a spoonfull of filling on one cookie and sandwiching it with another cookie.
